Set the cutter you want and feed pasta dough into the roller , turning the handle. The opening between the flat rollers is controlled by a numbered regulating knob with 10 positions for a variety in pasta thickness.

NB If you find your pasta dough sticks a little, dust the pasta maker lightly with flour first.
