The best way to get your pasta really thin when using the Marcato Atlas Pasta Maker is to thin out the pasta slowly. By this I mean don't go from a very thick setting to a very thin setting in one jump, but jump a couple of settings at a time. This will result in better pasta and avoid a problems of holes developing in the pasta sheet.
The Marcato Pasta Makers are extremely good and easy to use, but it is worth knowing a few tips.
